Glycerine is a colourless and odourless viscous liquid. It is sweet tasting, yet not as sweet as sugar - only about 60–75% as sweet. Glycerine is extremely water soluble. It can be derived from wither animal or plant sources - in this case it is derived from vegetables. In food glycerin can help retain moisture, prevent sugar crystallisation, and add bulk, smoothness, softness, sweetness and texture. In cosmetics it acts as a humectant, providing moisturising properties.
